"A Circassian Voice"
I would like to thank you for preparing such a nice and distinguished web site for kefir. I got some great information from your site, and I am also delighted that kefir is produced and consumed so far away.
My name is Muharrem Nesij HUVAJ (Age:25, Male). I am a Circassian (Caucasian in ethnic origin) living in Turkey. We are "brewing" (or making) kefir and drinking it regularly in our house. We (my family) produce and consume kefir on a household basis, and whenever possible we are trying to spread it.
I consider kefir to be a Gift of God to all humanity, and thus try to give it as a present to all of my friends.
Anyway, I wanted you to know that kefir is popular here too, and everday it's popularity is increasing. And I also wanted you to know that, as a Circassian, I greatly appreciate your acknowledgements of the origins and history of kefir.
We, the Circassians, are a strange community, spread to more than 40 countries around the world by a disastrous exile following our defeat against Russian Empire in 19th century. We live so seperated from each other, yet we do not loose contact with each other and also we do not loose our interest and affinity to our traditional culture.
Kefir is but one miracle originating from the Caucasus. The ancient food lore of the autochtonious folks of the region includes many more interesting food products, especially milk products. I believe, these and other secret (and sacred) information would become more public in time, and they would help bettering our lives around the globe.
